Start your Saturday morning with a burst of flavor by diving into these quick and easy breakfast tacos. Filled with savory sausage, soft scrambled eggs, and cheesy goodness, all wrapped up in a warm tortilla, these tacos are the perfect way to kick-start your day.

Ingredients

🧂 1 pound ground sausage

🥚 4 eggs

🌶️ 1 bell pepper (any color), diced

🧅 1 small onion, diced

🧀 1 cup cheese of choice, shredded (such as cheddar or Monterey Jack)

🌿 1 tablespoon butter

🌮 6 small tortillas

🥫 1 cup breakfast gravy (optional)

🧂 Salt, to taste

🌶️ Black pepper, to taste


Instructions

1- Prep the Ingredients:

  • Dice the bell pepper and onion.

  • Shred the cheese if not pre-shredded.

2- Cook the Sausage:

  • In a large skillet over medium heat, add the ground sausage. Cook and crumble the sausage until browned and cooked through, about 8-10 minutes. Remove from skillet and set aside.

3- Sauté Vegetables:

  • In the same skillet, add the diced bell pepper and onion. Sauté until they are tender and slightly caramelized, about 5 minutes. Remove from the skillet.

4- Scramble the Eggs:

  • In a bowl, whisk the eggs with a pinch of salt and black pepper.

  • In the skillet, add 1 tablespoon of butter. Once melted, reduce heat to medium-low and pour in the eggs. Gently scramble until they reach your desired consistency.

5- Assemble the Tacos:

  • Warm the tortillas in a clean, dry skillet over medium heat for about 30 seconds on each side.

  • Lay out the warm tortillas and layer each with a portion of the sausage, sautéed vegetables, scrambled eggs, and a sprinkle of shredded cheese.

6- Optional Gravy:

  • Heat the breakfast gravy in a small saucepan over medium heat. Drizzle over the tacos for extra flavor.

7- Serve:
