This hearty Chicken Stew is the perfect comfort food, packed with seasoned chicken, fresh vegetables, and aromatic herbs. It's a one-pot dish that's both nourishing and flavorful, making it an ideal main course for family dinners or cozy nights in.

Ingredients

🫒 Enough olive oil to cover the bottom of the pot

🍗 Seasoned chicken pieces (approx. 2 pounds)

🌶️ 1 red bell pepper, sliced

🌶️ 1 yellow bell pepper, sliced

🧅 1 onion, sliced

🌿 Fresh parsley, chopped (a handful)

🥣 Chicken broth or water (approx. 4 cups)

🌿 A few sprigs of thyme

🧊 1 chicken bouillon cube

🥔 3 potatoes, cut into chunks

🍅 1 cup cherry tomatoes

🌾 1 tablespoon flour

💧 Water (approx. 1/2 cup, mixed with flour for thickening)


Instructions

1- Prepare the Base:

  • Pour enough olive oil into a large pot or Dutch oven to cover the bottom.

2- Brown the Chicken:

  • Add the seasoned chicken pieces to the pot

  • Cook over medium heat until slightly browned on all sides (about 5-7 minutes).

3- Add Vegetables:

  • Introduce the sliced red and yellow bell peppers and the sliced onion to the pot with the chicken.

  • Stir occasionally and cook for another 5 minutes until the vegetables begin to soften.

4- Flavor the Stew:

  • Sprinkle in the chopped parsley.

  • Add the chicken broth or water and stir the mixture.

5- Enhance with Herbs:

  • Add the thyme sprigs and the chicken bouillon cube.

  • Stir until the cube dissolves.

6- Incorporate Potatoes and Tomatoes:

  • Add the potato chunks and cherry tomatoes to the pot.

7- Thicken the Stew:

  • In a small bowl, mix the flour with 1/2 cup of water until smooth.

  • Add this mixture to the stew and stir well to combine and thicken the sauce.

8- Simmer:

  • Reduce the heat to low and cover the pot.
