Creamy corn on the cob chunks offer a delightful twist on the classic corn on the cob. This dish combines the sweetness of air-fried corn with a rich, flavorful sauce, making it an irresistible side dish perfect for any meal.

Ingredients

๐ŸŒฝ 4 ears of corn, husked and cut into 3-4 inch chunks
๐Ÿงˆ Butter or olive oil
๐Ÿง„ 2 cloves garlic, minced
๐Ÿฅ› 1/2 cup heavy cream
๐Ÿ— 1/4 cup chicken broth
๐Ÿฅ„ A little mayonnaise
๐Ÿง€ Grated Parmesan cheese
๐ŸŒถ๏ธ Red pepper flakes to taste
๐ŸŒฟ Thyme to taste
๐Ÿง„ Garlic powder to taste
๐Ÿ‹ Lemon pepper to taste
๐Ÿ‹ Squeeze of lemon juice
๐ŸŒฟ A sprinkle of tropical Sazon (or chili powder) for a razzle dazzle and tropical taste

Instructions

1- Prepare the Corn:

  • Husk the corn and cut each ear into 3-4 inch chunks.
  • Ensure the pieces are uniform for even cooking.

2- Air Fry the Corn:

  • Preheat the air fryer to 400ยฐF (200ยฐC).
  • Place the corn chunks in a single layer in the air fryer basket.
  • Cook for 10-12 minutes, turning halfway through, until they are golden brown and slightly charred.

3- Heat the Pan:

  • In a large skillet, heat the butter or olive oil over medium heat.
  • Wait until the mixture is hot.

4- Add the Garlic:

  • Add the minced garlic to the pan.
  • Sautรฉ for 1-2 minutes until fragrant, being careful not to let it burn.

5- Make the Sauce:

  • Reduce the heat to low and pour in the heavy cream and chicken broth.
  • Add a little mayonnaise and stir to combine.
  • Stir in the grated Parmesan cheese until melted.
  • Season with red pepper flakes, thyme, garlic powder, lemon pepper, a squeeze of lemon juice, and tropical Sazon (or chili powder).

6- Combine with Corn:

  • Add the air-fried corn chunks to the skillet.
  • Let the mixture simmer gently for about 5 minutes, stirring occasionally, until the sauce thickens slightly and the corn is tender.

7- Serve:

  • Remove from heat and garnish with chopped fresh parsley.
  • Serve warm as a delicious side dish.
