Tender, flaky salmon filled with a rich and creamy shrimp and spinach stuffing, seasoned to perfection and pan-seared for a golden crust before finishing in the oven.


Ingredients

🥩 2 large salmon fillets (skin-on, thick cut)

🦐 1/2 lb shrimp, peeled and deveined

🧄 2 cloves garlic, minced

🧂 1 tsp sea salt

🍋 1 tsp lemon pepper

🌶️ 1 tsp Cajun seasoning

🌿 1 tsp paprika

🦞 1 tsp Old Bay seasoning

🧅 1 tsp onion powder

⚫ 1/2 tsp black pepper

🌿 1 tbsp parsley, chopped

🫒 1 tbsp olive oil

🧈 2 tbsp butter

Stuffing:

🥬 1 cup fresh spinach, chopped

🌶️ 1/4 cup diced bell peppers (red & yellow)

🧀 4 oz cream cheese, softened

🧀 1/4 cup shredded Parmesan cheese

Instructions

Prepare the Shrimp and Stuffing

1. Heat 1 tbsp olive oil in a skillet over medium heat.

2. Add the shrimp and season with sea salt, lemon pepper, Cajun seasoning, paprika, Old Bay, onion powder, black pepper, and parsley.

3. Cook for 2-3 minutes per side, then remove from heat and chop into small pieces.

4. In a mixing bowl, combine cooked shrimp, cream cheese, Parmesan cheese, minced garlic, spinach, and diced bell peppers. Stir until smooth and well-mixed.

Prepare the Salmon

5. Using a sharp knife, slice a deep pocket into the side of each salmon fillet, being careful not to cut all the way through.

6. Season the salmon fillets generously with the same spice mix used for the shrimp.

Stuff and Sear the Salmon

7. Stuff each salmon fillet with half of the shrimp mixture, pressing gently to keep the filling inside.

8. Heat butter in a skillet over medium-high heat.

9. Place the stuffed salmon fillets in the pan and sear for 2-3 minutes per side until golden brown.

Bake to Finish

10. Transfer the seared salmon fillets to a baking dish and bake at 375°F (190°C) for 10 minutes until the salmon is cooked through and flaky.

Serve and Enjoy

11. Garnish with fresh parsley and serve with lemon wedges or your favorite side dish.
