Creamy Tuscan Salmon Pasta – A rich and flavorful pasta dish featuring perfectly seared salmon, a creamy parmesan sauce, and vibrant spinach and tomatoes.

Ingredients

🐟 2 salmon fillets

🧂 1 tsp salt

🧂 1 tsp black pepper

🌶️ 1 tsp red pepper flakes

🧄 1 tsp garlic powder

🫒 2 tbsp olive oil

🍅 1 cup cherry tomatoes, halved

🧅 1 small onion, diced

🧄 4 cloves garlic, minced

🥬 2 cups fresh spinach

🥛 1 cup heavy cream

🧀 1 cup grated parmesan cheese

🍝 8 oz penne pasta, cooked

🍋 1 tbsp lemon juice


Instructions

1- Prepare the Salmon:

- Season the salmon fillets with salt, black pepper, red pepper flakes, and garlic powder.

- Heat olive oil in a pan over medium heat.

- Sear the salmon for 4-5 minutes per side until golden brown and fully cooked.

- Remove the salmon from the pan and set aside.

2- Make the Sauce:

- In the same pan, add diced onion and cook until translucent.

- Add minced garlic and cherry tomatoes, stirring until the tomatoes soften.

- Pour in heavy cream and grated parmesan cheese, stirring until the sauce thickens.

3- Combine the Ingredients:

- Add fresh spinach and stir until wilted.

- Return the salmon to the pan, spooning some sauce over the fillets.

- Stir in the cooked pasta and lemon juice, ensuring everything is well coated in the sauce.

4- Serve and Enjoy:

- Plate the pasta, topping it with additional parmesan if desired.

- Serve warm and enjoy!
