Instructions

1- Prep the Lobster:

  • Begin by cleaning the lobster tail.
  • Use kitchen scissors to cut through the top shell, exposing the meat.
  • Gently pull the meat up, splitting it slightly to butterfly the tail.

2- Marinate:

  • Combine the buttermilk and egg in a bowl, whisking until well mixed.
  • Submerge lobster tails in the buttermilk mixture for 10–15 minutes.

3- Mix the Dry Ingredients:

  • In a separate bowl, combine flour, fish fry mix, paprika, garlic powder, onion powder, parsley, Cajun seasoning, chili seasoning, salt, and pepper.
  • Mix well to ensure an even coating.

4- Coat the Lobster:

  • Remove lobster tails from the buttermilk mixture, allowing excess to drip off.
  • Dredge them in the dry mixture for a thorough and even coating.

5- Heat the Oil:

  • In a deep skillet or fryer, heat oil to 350°F (175°C).

6- Fry the Lobster Tails:

  • Place coated lobster tails into the hot oil.
  • Fry for about 3–4 minutes on each side until golden brown and crispy. Ensure the internal temperature reaches 140°F (60°C).

7- Serve:

  • Remove from oil and drain on a paper towel-lined plate.
