Ingredients
For the Mac Salad:
🍝 2 cups elbow macaroni

For the Stewed Jerk Chicken:
🍗 4 chicken thighs, bone-in
🌿 2 tablespoons jerk seasoning
🧄 2 cloves garlic, minced
🧅 1 onion, sliced
🌶️ 1 scotch bonnet pepper, chopped (optional)
🍅 1 can (14 oz) diced tomatoes
🥥 1 cup coconut milk
🥄 1 tablespoon olive oil

For the Garlic Spinach:
🥬 4 cups fresh spinach
🧄 2 cloves garlic, minced
🥄 1 tablespoon olive oil
🧂 Salt to taste
Instructions
1- Prepare the Mac Salad:
Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking process.
In a large bowl, combine macaroni, mayonnaise, shredded carrots, diced red onion, and diced bell peppers.
Add lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated. Set aside in the refrigerator while you prepare the rest of the meal.
2- Prepare the Stewed Jerk Chicken:
Rub the chicken thighs with jerk seasoning and let them marinate for at least 30 minutes, or overnight for more intense flavor.
In a large pot, heat olive oil over medium heat. Add the chicken thighs and brown on all sides. Remove and set aside.
In the same pot, add minced garlic, sliced onion, and scotch bonnet pepper. Sauté until the onion is translucent.
Add diced tomatoes and simmer for 5 minutes. Stir in the coconut milk and return the chicken to the pot.
Cover and let it simmer on low heat for about 30-40 minutes, or until the chicken is cooked through and tender.
3- Prepare the Garlic Spinach:
Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
Add the spinach and sauté until wilted. Season with salt to taste.
