Instructions

1- Prep the Collard Greens:

  • Start by thoroughly washing the collard greens to remove any grit. Chop them into bite-sized pieces and set aside.

2- Cooking the Turkey Wings:

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until they turn translucent, about 5 minutes.
  • Add the smoked turkey wings to the pot and pour in the chicken broth. Bring the mixture to a boil, then reduce to a simmer and cover. Let it cook for about 30 minutes to infuse the broth with the smoky turkey flavor.

3- Adding the Greens:

  • Stir in the collard greens, ensuring they are submerged in the broth. Add in the red pepper flakes, apple cider vinegar, and sugar, if desired.
  • Simmer the collard greens covered, for another 45 minutes to an hour until they are tender and have absorbed all the rich flavors. Stir occasionally, and adjust seasoning with salt if needed.

4- Final Touch:

  • Once the collards are tender, remove the turkey wings. You can pull the meat off the bones and add it back to the pot, discarding the bones.

5- Serve:
