Ingredients
🥩 1 pound ground beef
🫒 1 tablespoon olive oil
🧅 1 small onion, finely chopped
🧄 2 cloves garlic, minced
🌶️ 1 teaspoon ground cumin
🌶️ 1 teaspoon chili powder
🧈 2 tablespoons butter
🌾 2 tablespoons all-purpose flour
🥛 1 cup milk
🧀 1 ½ cups shredded cheddar cheese
🧂 Salt and pepper to taste
🥑 2 ripe avocados, diced
🧅 1 small red onion, finely chopped
🍅 1 large tomato, diced
🌶️ 1 jalapeño, seeded and minced
🌿 ¼ cup fresh cilantro, chopped
🍋 Juice of 1 lime
🧂 Salt and pepper to taste
🌯 6 small soft tortillas or buns
🌿 Fresh cilantro leaves for garnish (optional)

Instructions
1- Prepare the Ground Beef:
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the garlic and cook for another minute.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 6-8 minutes. Drain excess fat if necessary.
- Stir in the cumin, chili powder, salt, and pepper. Cook for another 2 minutes to allow the flavors to meld together. Remove from heat and set aside.
2- Make the Cheddar Cheese Queso:
- In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute.
- Gradually whisk in the milk, continuing to stir until the mixture thickens, about 3-5 minutes.
- Add the shredded cheddar cheese, stirring until melted and smooth. Season with salt and pepper to taste. Keep warm.
3- Prepare the Avocado Pico:
- In a bowl, combine the diced avocados, red onion, tomato, jalapeño, and cilantro.
- Add lime juice, salt, and pepper. Gently stir to combine. Set aside.
4- Assemble the Trio Stack:
- On each tortilla or bun, spread a layer of cheddar cheese queso.
- Top with a generous portion of the seasoned ground beef.
- Add a scoop of avocado pico on top of the beef.
