Instructions

1- Prep the Lamb:

  • If using, soak the lamb chops in milk for at least 30 minutes to help remove any gaminess.
  • Pat dry and season each chop with thyme, rosemary, paprika, lemon pepper, garlic powder, sea salt, and black pepper.

2- Prepare the Cheese Mixture:

  • In a medium bowl, blend the Boursin cheese, shredded Parmesan, and heavy cream until you achieve a thick yet spreadable consistency. Add Tony’s seasoning for an extra kick if desired.

3- Prepare the Bread Crumb Mixture:

  • In a separate dish, combine breadcrumbs, melted butter, olive oil, and assorted herbs. Stir until evenly coated.

4- Cook the Lamb Chops:

  • Heat a cast iron pan over medium-high heat with a little olive oil.
  • Add the lamb chops and cook until lightly browned on both sides, approximately 3-4 minutes per side. Drizzle with Browning & Seasoning sauce if using.
