Ingredients
🍖 1 pound of ground beef or sausage
🍅 1 can (10 ounces) of Rotel diced tomatoes and green chilies
🧀 16 ounces of Velveeta cheese, cubed
🫘 1 can (15 ounces) of black beans, drained and rinsed
🧀 1 cup of shredded cheddar and Monterey Jack cheese blend
🫑 1 green bell pepper, chopped
🧅 3 green onions, chopped (reserve some for garnish)
Instructions
1- Preheat Oven:
- Preheat your oven to 350°F (175°C).
2- Cook the Meat:
- In a large skillet over medium heat, cook the ground beef or sausage until fully browned, breaking it into small pieces as it cooks.
- Drain any excess fat from the skillet.
3- Add Vegetables:
- Add the chopped green bell pepper and most of the green onions (reserve some for garnish) to the skillet.
- Cook for an additional 2-3 minutes until the peppers are softened.
4- Combine Ingredients:
- Stir in the can of Rotel (do not drain) and black beans with the meat and vegetables.
- Mix well to combine.
5- Assemble the Dip:
- Transfer the mixture to an oven-safe baking dish.
- Distribute the cubed Velveeta cheese evenly over the top.
6- Bake:
- Place the dish in the preheated oven and bake for about 15 minutes, or until the Velveeta cheese is melted.
7- Add Shredded Cheese:
- Remove the dish from the oven and sprinkle the shredded cheddar and Monterey Jack cheese blend on top.
8- Final Bake:
- Return the dish to the oven and bake for an additional 5-10 minutes, or until the shredded cheese is melted and bubbly.
9- Serve:
- Once the cheese is melted, remove from the oven and garnish with the reserved chopped green onions.
- Serve hot with tortilla chips, veggies, or your favorite dippers.
