Ingredients
🦞 5 lbs live crawfish, washed and purged
🍋 3 lemons, halved
🧅 2 whole white onions, peeled and quartered
🌽 3 ears of corn, cut into thirds
🧄 1 head garlic, halved
🌿 3 stalks celery, chopped
🥔 1 lb small purple potatoes
🥩 1 lb smoked sausage, sliced
Seasoning & Broth

🧂 1/4 cup Cajun seasoning
🔥 1 tbsp paprika
🌶️ 1 tbsp cayenne pepper (adjust for spice level)
🫒 1 tbsp garlic powder
🧈 1 stick (1/2 cup) butter
🍊 1 whole orange, halved
🧊 2 gallons water

Instructions
Wash and Purge the Crawfish
1. Rinse the live crawfish in cold water 3-4 times until the water runs clear.
Prepare the Seasoned Broth
2. In a large stockpot, bring 2 gallons of water to a boil.
3. Add crab seasoning, Cajun seasoning, paprika, cayenne, garlic powder, and butter.
4. Squeeze in the juice of the lemons and orange, then drop the peels into the pot.
Cook the Vegetables and Sausage
5. Add onions, corn, garlic, celery, purple potatoes, and smoked sausage to the pot.
6. Boil for 20 minutes, allowing the flavors to infuse.
Cook the Crawfish
7. Add the washed crawfish to the boiling pot.
8. Cook for 5-7 minutes, then turn off the heat.
Soak for Extra Flavor
9. Let the crawfish soak in the seasoned broth for 10-15 minutes with the lid on.
10. Stir occasionally to help the flavors absorb.
Drain and Serve
11. Remove the crawfish and vegetables with a strainer or tongs and spread them onto a large serving tray.
12. Serve hot with extra butter, Cajun seasoning, and lemon wedges on the side.
