This Spinach Dip Mac and Cheese is a creamy, cheesy indulgence that combines the beloved comforts of mac and cheese with the savory richness of a spinach dip. Perfect for family meals or a decadent side dish, this recipe is sure to have everyone coming back for seconds.

Ingredients

💧 4 cups water
🧂 2 teaspoons salt
🍝 2 cups macaroni
🧈 2 tablespoons butter
🧄 3 cloves garlic, chopped
🌿 2 cups fresh spinach
🧀 4 ounces cream cheese, whipped
🍶 2 tablespoons sour cream
🧀 1 cup mozzarella cheese, shredded
🧀 1 cup cheddar cheese, shredded
🧂 1 teaspoon garlic powder
🧂 1 teaspoon onion powder
🐔 1 teaspoon chicken bouillon seasoning
🥛 1/4 cup heavy cream
🌶️ 1/2 teaspoon paprika


Instructions

1- Prepare Macaroni:

  • In a large pot, bring 4 cups of water to a boil. Add 2 teaspoons of salt and 2 cups of macaroni.
  • Cook the macaroni according to package instructions until al dente. Drain and set aside.

2- Make the Spinach Dip:

  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add 3 chopped garlic cloves and sauté until fragrant.
  • Add 2 cups of fresh spinach and sauté until wilted.

3- Create the Cheese Mixture:

  • Lower the heat and mix in 4 ounces of whipped cream cheese and 2 tablespoons of sour cream.
  • Stir until the cream cheese is fully melted and incorporated.
  • Add the cooked macaroni to the skillet with the spinach mixture.
  • Stir in 1 cup of shredded mozzarella and 1 cup of shredded cheddar cheese.
  • Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1 teaspoon of chicken bouillon seasoning.
  • Pour in 1/4 cup of heavy cream and mix everything thoroughly to ensure a creamy consistency.

4- Bake:

  • Preheat your oven to 350°F (175°C).
  • Transfer the mac and cheese mixture to an oven-safe pan.
  • Sprinkle additional shredded cheddar and mozzarella cheese on top.
  • Finish with a sprinkle of paprika for color.
  • Bake in the oven for about 15-20 minutes or until the cheese on top is melted and bubbly.

5- Serve:

  • Allow to cool slightly before serving to ensure the creamy texture sets.
