Ingredients

🍤 1 pound large shrimp, peeled and deveined
🥦 1 large head of broccoli, cut into florets

Orange Vinaigrette

🍊 1/4 cup freshly squeezed orange juice (about 1 large orange)
🍊 1 tablespoon orange zest
🫒 2 tablespoons olive oil
🍾 1 tablespoon white wine vinegar or rice vinegar
🍯 1 teaspoon honey or maple syrup
🥄 1 teaspoon Dijon mustard
🧂 Salt and freshly ground black pepper, to taste


Instructions

1- Prepare the Orange Vinaigrette:

  • In a small bowl, whisk together the orange juice, orange zest, olive oil, vinegar, honey, and Dijon mustard.
  • Season with salt and pepper to taste. Adjust the sweetness or acidity by adding more honey or vinegar, if needed.
  • Set aside to let the flavors meld.

2- Steam the Shrimp and Broccoli:

  • Fill a large pot with about 1-2 inches of water and bring it to a boil. Place a steamer basket over the pot, ensuring that the water does not touch the bottom of the basket.
  • Add the broccoli florets to the steamer basket, cover, and steam for about 4-5 minutes, or until the broccoli is bright green and tender-crisp.
  • Remove the broccoli and set aside. Keep the steamer basket on the pot.
  • Add the shrimp to the steamer basket, cover, and steam for about 3-4 minutes, or until the shrimp are pink and opaque.
  • Remove the shrimp from the steamer basket.

3- Assemble the Dish:

  • In a large bowl, combine the steamed broccoli and shrimp.
  • Drizzle the orange vinaigrette over the shrimp and broccoli, tossing gently to coat everything evenly.
  • Taste and adjust seasoning with additional salt and pepper, if necessary.

4- Serve:

  • Transfer the shrimp and broccoli to a serving platter or individual plates.
  • Garnish with additional orange zest or fresh herbs like parsley or cilantro, if desired.
  • Serve immediately while warm.
