Ingredients

Instructions

1- Prep the Ingredients:

  • Peel and chop the potatoes into large chunks. Dice the onion and bell pepper, slice the carrots, and mince the garlic. Set aside.

2- Sear the Turkey Wings:

  • In a large pot, heat the olive oil over medium-high heat. Add the turkey wings and sear for about 5 minutes on each side until they are golden brown. Remove the wings and set them aside.

3- Cook the Vegetables:

  • In the same pot, add the diced onions and cook until translucent, about 3 minutes. Add the garlic and cook for another minute until fragrant.

4- Combine Ingredients:

  • Return the seared turkey wings to the pot. Pour in the chicken broth and diced tomatoes. Stir to combine.

5- Stew the Mixture:

  • Bring the mixture to a simmer and add the carrots, potatoes, rosemary, salt, and pepper. Cover and reduce the heat to low. Let the stew simmer for about 45 minutes or until the potatoes are tender and the turkey is cooked through.

6- Add the Beans:

  • Stir in the white beans and let the stew cook for an additional 10 minutes to allow the flavors to meld.
