For the Chicken:

๐Ÿง„ 1 tablespoon Garlic powder
๐Ÿง… 1 tablespoon Onion powder
๐ŸŒฟ 1 tablespoon Adobo seasoning
๐ŸŒถ๏ธ 1 tablespoon Sazon
๐ŸŒถ๏ธ 1 tablespoon Paprika
โšซ 1 teaspoon Black pepper
๐Ÿง‚ Salt to taste
๐Ÿฅฌ 2 stalks Celery, chopped
๐Ÿง… 1 Yellow onion, chopped
๐ŸŒถ๏ธ 1 Green bell pepper, chopped
๐ŸŒถ๏ธ 1 Red bell pepper, chopped
๐Ÿง„ 4 cloves Garlic, chopped
๐Ÿ… 2 Tomatoes, diced
๐ŸŒถ๏ธ Scotch bonnet pepper (a small piece)
๐ŸŒฟ 1 handful Cilantro, chopped (optional)
๐ŸŒฟ 1 teaspoon Thyme
๐Ÿ›ข๏ธ 2 tablespoons Oil for frying

For the Cilantro Lime Rice:
๐Ÿš 1 cup Rice
๐ŸŒฟ 1/4 cup Cilantro, chopped
๐Ÿ‹ 1 Lime, juiced
๐Ÿง‚ Salt to taste


Instructions

1- Seasoning the Chicken:

  • Rub the chicken pieces with garlic powder, onion powder, adobo, sazon, paprika, black pepper, and salt.

2- Searing the Chicken:

  • In a large pot, heat oil over medium-high heat.
  • Add the chicken pieces and sear until both sides are golden brown. Remove from the pot and set aside.

3- Cooking the Vegetables:

  • In the same pot, add celery, onion, green and red peppers, and garlic. Cook until softened.
  • Stir in cilantro and chopped tomatoes, along with a small piece of scotch bonnet pepper.

4- Making the Sauce:

  • Add flour to the vegetables, stir until the flour is cooked and no longer visible.
  • Pour in chicken stock and water, stir to create a thick sauce.
  • Add thyme for additional flavor.

5- Simmering:

  • Return the seared chicken to the pot, nestle it into the sauce.
  • Cover and simmer over low heat for about 1 hour, stirring occasionally and adjusting seasoning to taste.

6- Preparing the Cilantro Lime Rice:

  • Cook rice according to package instructions.
  • Stir in chopped cilantro, lime juice, and a pinch of salt.
