Instructions

1- Preparation:

  • Start by rinsing the chicken wings under cold water, then pat them dry with paper towels. Set aside.

2- Marinate:

  • In a large bowl, combine the chicken wings with sofrito, garlic, onion, green and yellow peppers, oregano, Sazon, Adobo, garlic powder, onion powder, coriander, and cilantro lime dressing.
  • Toss to ensure the wings are well-coated with the marinade.
  • Allow the chicken to marinate for at least 30 minutes, or up to 2 hours for deeper flavor absorption.

3- Searing:

  • In a large, wide pot or deep skillet, heat olive oil over medium-high heat.
  • Add the marinated chicken wings and sear until they are golden brown, turning occasionally for even cooking.
  • This should take about 5-7 minutes.

4- Stewing:

  • Lower the heat to medium.
  • Add the chopped onions, garlic, green pepper, and yellow pepper to the pot, stirring occasionally until they are softened, about 3-4 minutes.
  • Add the tomato paste, chicken bouillon, and about 1 cup of water to the pot.
  • Stir to combine all ingredients and bring to a simmer.

5- Cook:

  • Reduce the heat to low, cover the pot, and let the wings stew for 1 to 1.5 hours.
  • Stir occasionally, and add more water if necessary to maintain a saucy consistency.
  • Cook until the wings are tender and the flavors are well-blended.
  • Season with salt and pepper to taste.

6- Serve:

  • Garnish with fresh cilantro if desired, and serve hot with rice, plantains, or a side of your choice.
