Ingredients

🐖 4 pork chops, bone-in or boneless
🥄 1 cup Greek yogurt
🌿 2 tablespoons Dijon mustard
🍋 Juice of 1 lemon
🧄 3 cloves garlic, minced
🌿 1 tablespoon dried oregano
🌿 1 teaspoon dried thyme
🌶️ 1 teaspoon smoked paprika
🧂 Salt, to taste
🧂 Black pepper, to taste

Instructions

1- Prepare the Marinade:

  • In a medium-sized bowl, combine the Greek yogurt, Dijon mustard, lemon juice, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and black pepper.
  • Mix well until the ingredients are fully integrated to create a smooth marinade.

2- Marinate the Pork Chops:

  • Place the pork chops in a large resealable plastic bag or shallow dish.
  • Pour the marinade over the chops, ensuring each one is evenly coated.
  • Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to develop.

3- Preheat the Pan:

  • When ready to cook, heat the olive oil in a large skillet over medium-high heat.

4- Cook the Pork Chops:

  • Remove the marinated pork chops from the fridge and allow them to sit at room temperature for about 10 minutes.
  • Carefully place the chops in the hot skillet, discarding any excess marinade.
  • Cook for 5-7 minutes on each side, or until the internal temperature reaches 145°F (63°C) and they are golden brown.

5- Rest and Serve:

  • Remove the pork chops from the skillet and allow them to rest for 5 minutes before serving.
  • This allows the juices to redistribute, ensuring a juicy and tender chop.
