๐ŸŒฟ 2 tablespoons Dijon mustard
๐Ÿ‹ Juice of 1 lemon
๐Ÿง„ 3 cloves garlic, minced
๐ŸŒฟ 1 tablespoon dried oregano
๐ŸŒฟ 1 teaspoon dried thyme
๐ŸŒถ๏ธ 1 teaspoon smoked paprika
๐Ÿง‚ Salt, to taste
๐Ÿง‚ Black pepper, to taste
๐Ÿซ’ 1 tablespoon olive oil

Instructions

1- Prepare the Marinade:

  • In a medium-sized bowl, combine the Greek yogurt, Dijon mustard, lemon juice, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and black pepper.
  • Mix well until the ingredients are fully integrated to create a smooth marinade.

2- Marinate the Pork Chops:

  • Place the pork chops in a large resealable plastic bag or shallow dish.
  • Pour the marinade over the chops, ensuring each one is evenly coated.
  • Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to develop.

3- Preheat the Pan:

  • When ready to cook, heat the olive oil in a large skillet over medium-high heat.

4- Cook the Pork Chops:

  • Remove the marinated pork chops from the fridge and allow them to sit at room temperature for about 10 minutes.
  • Carefully place the chops in the hot skillet, discarding any excess marinade.
  • Cook for 5-7 minutes on each side, or until the internal temperature reaches 145ยฐF (63ยฐC) and they are golden brown.

5- Rest and Serve:

  • Remove the pork chops from the skillet and allow them to rest for 5 minutes before serving.
  • This allows the juices to redistribute, ensuring a juicy and tender chop.

Prep Time: 10 minutes
Marinating Time: 1 hour (minimum)
Cook Time: 15 minutes
Total Time: About 1 hour and 25 minutes
Servings: 4
Equipment: Large skillet, medium-sized bowl, large resealable plastic bag or shallow dish

Cooking Tips:

  • For extra flavor, add a sprig of rosemary to the marinade.
  • If you prefer a little heat, add a pinch of cayenne pepper to the spice mix.
