Ingredients

🥩 1 lb ground beef
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌿 1 teaspoon dried parsley
🧂 1/2 teaspoon adobo seasoning
📦 1 packet of Sazón seasoning (optional)
🧀 1 cup sharp cheddar cheese, sliced
🧀 1/2 cup pepper jack cheese, sliced
🥟 20 empanada shells (Goya recommended)
🌿 Olive oil spray or oil for air frying


Instructions

1- Prepare the Filling:

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Season the beef with garlic powder, onion powder, dried parsley, adobo seasoning, and the optional Sazón seasoning. Stir until the meat is evenly seasoned.

2- Prepare the Empanada Shells:

  • Lay out the empanada shells on a clean surface, keeping the plastic separators underneath to prevent sticking.

3- Assemble the Empanadas:

  • Spoon a portion of the seasoned beef onto one side of each empanada shell, ensuring it’s not placed in the center.
  • Add a couple of slices of sharp cheddar cheese and a few pieces of pepper jack cheese on top of the beef.

4- Seal the Empanadas:

  • Fold over the empty half of the shell to cover the filling, creating a half-moon shape.
  • Press the edges together firmly, and use a fork to crimp and seal the edges securely.

5- Cook the Empanadas:

  • Preheat your air fryer to 375°F (190°C).
  • Lightly spray or brush each empanada with olive oil.
  • Place a batch of empanadas in the air fryer basket, making sure they aren’t touching.
  • Cook for 8-10 minutes or until golden brown and crispy. Repeat with remaining empanadas.

6- Serve:

  • Let the empanadas cool for a few minutes before serving. Enjoy them as they are or with your favorite dipping sauce.
