Ingredients
For the Chicken:
🐔 2 Chicken breasts
🧂 1 Packet ranch seasoning
🌿 1 Tablespoon chicken seasoning
🌶️ 1 Teaspoon Cajun seasoning
🧂 1 Teaspoon paprika
🧄 1 Teaspoon garlic powder
🧅 1 Teaspoon onion powder
🌶️ 1 Teaspoon sazon
🌶️ 1 Teaspoon chipotle chili powder
🌶️ 1 Teaspoon chili powder
🧂 1 Teaspoon adobo seasoning
🥚 1 Egg
🥛 1 Cup buttermilk
🌾 1 Cup all-purpose flour
For the Sauce:
🌶️ 1/2 Cup Frank’s hot sauce
🥄 1/2 Cup mayonnaise
🧂 1 Packet ranch seasoning
🌶️ 1/2 Teaspoon red pepper flakes
🌶️ 1/2 Teaspoon cayenne pepper
🌿 1 Teaspoon parsley
For Assembly:
🍞 Brioche buns
🥒 Pickles
🧈 Butter or 🫒 Olive oil for toasting buns
Instructions
1- Prep the Chicken:
- In a bowl, combine the ranch seasoning, chicken seasoning, Cajun seasoning, paprika, garlic powder, onion powder, sazon, chipotle chili powder, chili powder, and adobo seasoning.
- Pat the chicken breasts dry and coat them well with the spice mixture.
2- Marinate:
- In a separate bowl, whisk together the egg and buttermilk.
- Add the seasoned chicken breasts into the buttermilk mixture, ensuring they are fully submerged. Let them marinate for about 30 minutes.
3- Prepare the Sauce:
- In another bowl, mix Frank’s hot sauce, mayonnaise, ranch seasoning, red pepper flakes, cayenne pepper, and parsley.
- Adjust seasoning to taste. Set aside.
4- Coat & Fry:
- Heat oil in a pan until hot.
- Dredge marinated chicken in flour that’s been seasoned (using some of the leftover spice mixture).
- Gently place in the hot oil and fry until golden brown and cooked through, about 5-6 minutes per side, depending on thickness.
5- Toast the Buns:
- In a separate pan, melt butter or add olive oil and a sprinkle of parsley.
- Toast the brioche buns until golden.
6- Assemble the Sandwich:
- Spread a generous amount of the prepared sauce on both sides of the brioche buns.
- Place the fried chicken on the bottom half of the bun.
- Add pickles on top of the chicken, then cover with the top half of the bun.
