Ingredients

🍋 1 fresh lemon, sliced

For the Cilantro Cauliflower Rice:
🥑 2 tablespoons avocado or olive oil
🧄 2 cloves garlic, chopped
🌿 1 cup fresh cilantro, chopped
🌾 1 bag cauliflower rice (stir fry or regular)

For the Asparagus:
🥬 1 bunch asparagus
🧂 Salt, to taste
⚫ Black pepper, to taste


Instructions

1- Preheat the oven:

  • Set your oven to 350°F (175°C).

2- Prepare the Cod:

  • In a bowl, combine avocado oil, chopped garlic, thyme, oregano, cayenne, paprika, garlic powder, onion powder, and seafood seasoning.
  • Coat the cod filets in the prepared mixture, ensuring they are well covered.
  • Lay the lemon slices on an oven-safe pan and place the seasoned cod filets on top of the lemons.

3- Bake the Cod:

  • Transfer the pan to the oven and bake for about 30 minutes, adjusting for thickness of the fish until the cod is flaky and cooked through.

4- Cook the Cauliflower Rice:

  • Heat avocado or olive oil in a skillet over medium heat.
  • Add chopped garlic and cook until fragrant.
  • Add cauliflower rice to the skillet and sauté for 5-7 minutes.
  • Stir in chopped cilantro and mix well.

5- Prepare the Asparagus:

  • Meanwhile, trim the asparagus ends.
  • Heat a small amount of oil in a pan over medium heat.
  • Cook the asparagus for about 5 minutes, or until tender yet crisp.
  • Season with salt and pepper to taste.

6- Plate the Dish:

  • Serve cod filets alongside a generous portion of cilantro cauliflower rice and asparagus on each plate.
  • Garnish with extra slices of lemon if desired.
