๐ฏ 3 tablespoons honey
๐ถ๏ธ 1 tablespoon sriracha sauce
๐ง 2 cloves garlic, minced
๐ง
1 small red onion, diced
๐ซ 2 tablespoons olive oil
๐ Juice of 1 lime
๐ฟ 2 tablespoons fresh cilantro, chopped
๐ง Salt, to taste
๐ง Black pepper, to taste
Instructions
1- Prepare the Marinade:
- In a small bowl, mix together honey, sriracha sauce, minced garlic, lime juice, salt, and pepper. Stir until well combined.
2- Marinate the Shrimp:
- Place the shrimp in a large resealable bag or a shallow dish. Pour the marinade over the shrimp, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
3- Prepare the Shrimp for Cooking:
- Remove shrimp from the marinade. In separate bowls, prepare all-purpose flour, beaten egg, and buttermilk. Dip each shrimp in buttermilk, then flour, then egg, and back to flour for a nice coating.
4- Cook the Shrimp:
- Heat olive oil in a large skillet over medium heat.
- Add diced red onion to the skillet and sautรฉ until translucent, about 2-3 minutes.
- Add coated shrimp to the skillet, cooking for about 2 minutes on each side or until they turn pink and opaque.
5- Add Pineapple:
- Once the shrimp are almost cooked, add the pineapple chunks to the skillet. Continue to cook for an additional 2-3 minutes, allowing the flavors to meld and the pineapple to caramelize slightly.
6- Finish the Dish:
- Remove the skillet from heat and sprinkle with freshly chopped cilantro.
7- Serve:
- Serve the shrimp over rice or alongside your favorite side dish. Garnish with extra lime wedges for a zesty finish.
