Ingredients

🍤 1 pound shrimp, peeled and deveined
🥛 Buttermilk (for marinating)
🍚 All-purpose flour (for coating shrimp)
🥚 1 egg (for coating shrimp)
🍍 1 cup pineapple chunks (fresh or canned)
🍯 3 tablespoons honey
🌶️ 1 tablespoon sriracha sauce
🧄 2 cloves garlic, minced
🧅 1 small red onion, diced
🫒 2 tablespoons olive oil
🍋 Juice of 1 lime
🌿 2 tablespoons fresh cilantro, chopped
🧂 Salt, to taste
🧂 Black pepper, to taste


Instructions

1- Prepare the Marinade:

  • In a small bowl, mix together honey, sriracha sauce, minced garlic, lime juice, salt, and pepper. Stir until well combined.

2- Marinate the Shrimp:

  • Place the shrimp in a large resealable bag or a shallow dish. Pour the marinade over the shrimp, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

3- Prepare the Shrimp for Cooking:

  • Remove shrimp from the marinade. In separate bowls, prepare all-purpose flour, beaten egg, and buttermilk. Dip each shrimp in buttermilk, then flour, then egg, and back to flour for a nice coating.

4- Cook the Shrimp:

  • Heat olive oil in a large skillet over medium heat.
  • Add diced red onion to the skillet and sauté until translucent, about 2-3 minutes.
  • Add coated shrimp to the skillet, cooking for about 2 minutes on each side or until they turn pink and opaque.

5- Add Pineapple:

  • Once the shrimp are almost cooked, add the pineapple chunks to the skillet. Continue to cook for an additional 2-3 minutes, allowing the flavors to meld and the pineapple to caramelize slightly.

6- Finish the Dish:

  • Remove the skillet from heat and sprinkle with freshly chopped cilantro.
