Pineapple Spicy Pork Tacos are a delightful fusion of sweet and spicy flavors, perfect for a summer meal or a festive gathering. These tacos are packed with juicy pork, fresh pineapple salsa, and creamy avocado, bringing a tropical twist to a classic favorite.

Ingredients

🌿 1 ½ pounds pork shoulder or pork loin, thinly sliced
🍍 1 cup pineapple juice
🥢 2 tablespoons soy sauce
🌶️ 2 tablespoons chili powder
🌿 1 tablespoon ground cumin
🌶️ 1 tablespoon paprika
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌶️ 1 teaspoon cayenne pepper (adjust for spice level)

🍍 1 cup diced fresh pineapple
🍅 1 medium tomato, diced
🥑 1 avocado, sliced

🍋 1 lime, cut into wedges


Instructions

1- Marinate the Pork:

  • In a large bowl, combine pineapple juice, soy sauce, chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  • Add the thinly sliced pork to the marinade, ensuring it's completely covered. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

2- Cook the Pork:

  • Heat a large skillet over medium-high heat.
  • Remove the pork from the marinade and cook in batches (if necessary) until cooked through and slightly charred, about 5-7 minutes per batch. Set aside.

3- Prepare the Toppings:

  • In a small bowl, mix the diced pineapple, tomato, red onion, and cilantro. Add a squeeze of lime juice and a pinch of salt to taste.
  • Slice the avocado and set aside.

4- Warm the Tortillas:

  • Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until warm and pliable.

5- Assemble the Tacos:

  • Place a portion of the cooked spicy pork on each tortilla.
  • Top with the pineapple-tomato salsa, avocado slices, and a dollop of sour cream.
