Start your day with these delightful breakfast biscuit pies, a perfect blend of savory flavors enclosed in a flaky biscuit crust. Each pie is filled with juicy sausage links, crispy bacon, and fluffy scrambled eggs, making it a hearty morning treat. Ideal for busy mornings or a leisurely brunch, these pies are both satisfying and simple to prepare.

Ingredients

🍞 1 can of biscuit dough (8 biscuits)
🌭 8 sausage links
🥓 8 strips of bacon
🥚 4 large eggs
🫒 2 tablespoons olive oil
🧂 Salt and pepper to taste
🧀 Optional: shredded cheese, chopped chives, or green onions for garnish


Instructions

1- Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2- Cook the Bacon and Sausage:

  • In a skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the bacon strips and cook until crispy. Remove from the skillet and drain on paper towels.
  • In the same skillet, cook the sausage links until browned and cooked through. Remove from the skillet and set aside.

3- Prepare the Eggs:

  • In a bowl, whisk the eggs with a pinch of salt and pepper.
  • In the same skillet, add the remaining 1 tablespoon of olive oil if needed, and scramble the eggs until just set. Remove from heat and set aside.

4- Assemble the Biscuit Pies:

  • On a lightly floured surface, flatten each biscuit to about 4 inches in diameter.
  • Place a cooked sausage link, a strip of bacon (cut to fit), and a spoonful of scrambled eggs in the center of each biscuit.
  • Optionally, add a sprinkle of shredded cheese on top of the filling.
  • Fold the edges of the biscuit dough up and over the filling, pinching to seal and form a small pie or pouch.

5- Bake the Biscuit Pies:

  • Place the assembled biscuit pies on a baking sheet lined with parchment paper or a lightly greased baking sheet.
  • Bake in the preheated oven for 15-18 minutes, or until the biscuits are golden brown and cooked through.

6- Serve:

  • Remove from the oven and let cool slightly before serving.
  • Garnish with chopped chives or green onions if desired.
