Ingredients
🫒 3 tablespoons olive oil (more or less depending on the amount of shrimp)
🧈 2 tablespoons butter
🍤 Shrimp (adjust quantity as desired)
🧄 3–4 cloves fresh garlic, diced
🌿 Fresh cilantro, roughly chopped (as much as you like)
🍋 Lemon juice, to taste
🌶️ Crushed red pepper, to taste (optional)
🍜 Noodles of your choice (I recommend linguini)
🧀 Parmesan cheese, for garnish (optional)
🧂 Seasonings of your choice (optional)
Instructions
1- Prepare the Noodles:
Bring a pot of salted water to a boil.
Add your selected noodles (like linguini) to the pot and cook according to package instructions until al dente. Once cooked, drain and set aside.
2- Cook the Shrimp:
Heat a pan over medium-high heat and add olive oil.
Once the oil is hot, add the shrimp to the pan. Avoid overcrowding, cooking in batches if necessary.
Cook shrimp for 1–2 minutes on each side or until they turn opaque and pink.
Remove shrimp from the pan and set aside.
3- Prepare the Scampi Sauce:
In the same pan, lower the heat to medium and add butter.
As the butter melts, add diced garlic, sautéing for about 1 minute until fragrant.
Stir in lemon juice and crushed red pepper, if using.
Add chopped cilantro, stirring to combine all flavors.
4- Combine All Ingredients:
Return the shrimp to the pan and toss to coat in the scampi sauce.
Add the cooked noodles to the pan, mixing everything together until well-combined and heated through.
5- Finish and Serve:
Transfer the shrimp scampi to serving plates.
Garnish with Parmesan cheese, a dash more cilantro, and a squeeze of lemon juice, if desired.
Serve immediately while hot.
