Ingredients

For the Brown Rice:

๐Ÿ— 2 cups chicken broth

For the Chicken:

๐Ÿฒ 1 cube chicken bouillon
๐Ÿฅ‘ 1 tablespoon avocado oil

For the Shrimp:
๐Ÿค 200g shrimp (peeled and deveined)
๐Ÿฅ› 1/4 cup plain yogurt
๐ŸŒถ๏ธ Pinch of paprika, cumin, coriander, and chicken bouillon (same as chicken)
๐ŸŒฟ 1 tablespoon chopped cilantro
๐Ÿฅ‘ 1 tablespoon avocado oil

For the Tzatziki Sauce:
๐Ÿฅ› 1/2 cup plain yogurt
๐Ÿฅ’ 1/2 cucumber (shaved)
๐Ÿ‹ Juice of 1 lemon
๐ŸŒฟ 1 tablespoon fresh dill, chopped
๐Ÿง‚ 1/2 teaspoon Himalayan pink salt
๐Ÿท 1 teaspoon red wine vinegar
๐Ÿง„ 1 clove garlic, minced

For the Vegetable Salad:
๐Ÿฅ’ 1 cucumber
๐Ÿ… 1 tomato
๐Ÿง… 1/2 red onion
๐Ÿ‹ Juice of 1 lime
๐ŸŒฟ Black pepper to taste


Instructions

1- Prepare the Brown Rice:

  • Rinse the brown rice under cold water. In a medium saucepan, combine the rice and chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 20-25 minutes, or until rice is tender and liquid is absorbed.

2- Marinate and Cook the Chicken:

  • Remove tendons from chicken tenders. In a bowl, mix yogurt, paprika, cumin, coriander, and chicken bouillon. Add chicken and coat well. Let it marinate for at least 10 minutes.
  • Heat avocado oil in a skillet over medium-high heat. Grill the chicken until browned with grill marks, ensuring it is cooked through (about 5-7 minutes per side).

3- Marinate and Cook the Shrimp:

  • In a bowl, combine shrimp with yogurt, seasonings, and cilantro. Coat well.
  • Using the same skillet, add avocado oil and grill the shrimp until they turn pink and opaque (about 2-3 minutes per side).

4- Prepare the Tzatziki Sauce:

  • Combine yogurt, shredded cucumber, lemon juice, dill, salt, red wine vinegar, and minced garlic. Mix well to integrate all flavors.

5- Prepare the Vegetable Salad:

  • Dice cucumber, tomato, and red onion. Mix in a bowl with lime juice and a dash of black pepper.

6- Assemble the Gyro Bowl:

  • In individual serving bowls, layer the cooked brown rice at the bottom.
  • Top with grilled chicken and shrimp.
  • Add a generous portion of vegetable salad.
  • Drizzle with tzatziki sauce.
