Ingredients
🍖 2 lbs pork shoulder, cut into bite-sized pieces
🧂 1 tbsp pink Himalayan salt
🍋 2 limes, juiced
🧄 4 cloves garlic, minced
🧅 1 small onion, sliced
🌿 2 bay leaves
🌿 1 tbsp chopped parsley
🔥 2 tbsp Cajun seasoning
🌶️ 1 tsp cayenne pepper
🌽 1 cup cornstarch
🥚 2 eggs, beaten
🛢️ Vegetable oil for frying
For the Dipping Sauce:
🍋 1 lime, juiced
🌶️ 1 tbsp cayenne pepper sauce
🌿 1 tbsp chopped parsley
🧂 Pinch of salt
Instructions
1- Prepare the Pork:
- In a pot, combine pork shoulder, onion, garlic, bay leaves, salt, and lime juice.
- Add enough water to cover the meat and bring to a boil.
- Simmer for 30-40 minutes until tender.
2- Season and Coat:
- Drain the pork and let it cool slightly.
- Coat the pork pieces with Cajun seasoning, cayenne pepper, and chopped parsley.
- Dip each piece in beaten eggs, then coat with cornstarch for extra crispiness.
3- Fry the Pork:
- Heat vegetable oil in a deep pot to 350°F (175°C).
- Fry pork in batches until golden brown and crispy, about 4-5 minutes per batch.
- Remove and drain on a paper towel.
4- Make the Dipping Sauce:
- In a small bowl, mix lime juice, cayenne pepper sauce, chopped parsley, and salt.
- Stir well and serve alongside the crispy pork.
