Ingredients

🍊 Juice of 1 orange
🍋 Juice of 1 lime
🧄 2 cloves garlic, crushed

For the Steak Seasoning:
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌿 1 teaspoon cumin
🌶️ 1 teaspoon paprika
🌶️ 1/2 teaspoon chili powder
🧂 1 teaspoon salt
🧂 1/2 teaspoon pepper

For the Quesadilla:
🥩 300g steak, thinly sliced
🌶️ 1 red pepper, sliced
🌶️ 1 green pepper, sliced
🧅 1 onion, sliced
🧀 200g mozzarella cheese, shredded
🌮 4 large flour tortillas

Instructions

1- Marinate the Steak:

In a bowl, mix the orange juice, lime juice, and crushed garlic.
Add the sliced steak to the bowl, ensuring it's well-coated with the marinade.
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to develop.

2- Prepare the Steak Seasoning:

In a small bowl, combine garlic powder, onion powder, cumin, paprika, chili powder, salt, and pepper. Mix well and set aside.

3- Cook the Steak:

After marinating, remove the steak from the fridge and let it come to room temperature.
Heat a skillet over medium-high heat. Add the steak and sprinkle with the seasoning mix.
Cook the steak for about 3-5 minutes or until it reaches your desired level of doneness. Remove from the skillet and let it rest.

4- Sauté Vegetables:

In the same skillet, add a little oil if necessary and sauté the red peppers, green peppers, and onion until tender and slightly charred, about 5-7 minutes.

5- Assemble the Quesadillas:

Place a tortilla on a clean skillet over medium heat.
Sprinkle a layer of mozzarella cheese on one half of the tortilla.
Add some of the cooked steak and sautéed vegetables.
Add another layer of cheese on top (for maximum gooeyness).
Fold the tortilla over to encase the filling.

6- Cook the Quesadillas:

Cook the quesadilla for about 2-3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese inside has melted.
Repeat with the remaining tortillas and filling.

7- Serve:

Slice each quesadilla into wedges and serve hot. Enjoy with your favorite salsa, sour cream, or guacamole!
