Instructions
1- Marinate the Steak:
- In a bowl, combine crushed garlic, olive oil, soy sauce, Worcestershire sauce, orange juice, lime juice, and a pinch of salt and pepper.
- Coat the steak well with the marinade and let it sit in the fridge for at least an hour.
2- Prepare the Broccoli Rabe:
- Trim any unwanted parts from the broccoli rabe, focusing on removing the bottom half of the stems.
- In a pan or pot, heat olive oil and lightly sear the crushed garlic until golden. Remove the garlic to avoid burning.
- Add broccoli rabe to the pan and let it steam down. Add the garlic back along with red pepper flakes, salt, and pepper. Cook for 6-7 minutes or until desired tenderness is reached.
3- Cook the Potatoes:
- Boil mini red potatoes for approximately 15 minutes until tender. Drain and toss with butter.
4- Grill the Steak:
- Heat a pan until it's smoking hot. Add the marinated steak and cook without moving it for at least 2 minutes.
- Once the steak is easily movable, flip it and repeat. Cook according to your preference:
- 3-5 minutes for medium-rare (135Β°F internal temperature)
- 5-7 minutes for medium (140Β°F)
- 8-10 minutes for medium-well (150Β°F)
5- Make Chimichurri Sauce:
- In a bowl, mix cilantro, parsley, minced garlic, scotch bonnet pepper, and lemon/lime juice. Season with salt and pepper.
6- Serve:
- Plate the steak with a side of broccoli rabe and potatoes. Drizzle the chimichurri sauce over the steak and enjoy.

Cooking Tips
- Use oils with a high smoke point, like vegetable, avocado, peanut, canola, sunflower, or sesame for the best steak sear.
- Adjust the heat level in the chimichurri by omitting the scotch bonnet or replacing it with a milder pepper.
