Ingredients
🥩 4 cube steaks (about 1/2 inch thick)
🧂 Salt and pepper to taste
🌾 1 cup all-purpose flour
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌶️ 1 teaspoon paprika
🌶️ 1/2 teaspoon cayenne pepper (optional, for heat)
🥚 2 large eggs
🥛 1/4 cup milk
🛢️ Vegetable oil, for frying
🧅 1 large onion, thinly sliced
🌾 2 tablespoons all-purpose flour
🥣 2 cups beef broth
🥛 1/2 cup milk or cream
🧂 Salt and pepper to taste
Instructions
1- Prepare the Steaks:
- Pat the cube steaks dry with paper towels, then season both sides with salt and pepper.
- In a shallow dish, combine the flour, garlic powder, onion powder, paprika, and cayenne pepper.
- In another bowl, beat the eggs with the milk.
2- Bread the Steaks:
- Dip each steak in the flour mixture, then into the egg mixture, and back into the flour mixture, ensuring they are well coated.
3- Fry the Steaks:
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.
- Once the oil is hot, add the steaks, cooking them in batches if necessary to avoid overcrowding.
- Fry each steak for about 3-4 minutes per side, or until golden brown and cooked through.
- Remove and drain on paper towels.
4- Make the Onion Gravy:
- Remove excess oil from the skillet, leaving about 2 tablespoons.
- Add the sliced onions and cook over medium heat, stirring occasionally, until they are soft and starting to brown, about 10 minutes.
5- Make the Roux:
- Sprinkle the flour over the onions and stir to coat.
- Cook for another 2 minutes to remove the raw flour taste.
6- Add Liquid:
- Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the skillet.
- Bring to a simmer and cook until thickened, about 5 minutes.
7- Finish the Gravy:
- Stir in the milk or cream, and season with salt and pepper to taste.
- Continue to cook until the gravy is heated through and reaches your desired consistency.
8- Assemble:
- Return the fried steaks to the skillet, spooning the onion gravy over them.
- Cover and let simmer for a few minutes to heat the steaks through and meld the flavors.
9- Serve:
- Serve the smothered country fried steak with your favorite sides, such as mashed potatoes or green beans, and enjoy!
