Ingredients

Instructions
1- Prepare the Pork Chops:
- Pat the pork chops dry with paper towels, then season both sides with salt and pepper.
- In a shallow dish, combine the flour, garlic powder, onion powder, paprika, and cayenne pepper.
- In another bowl, beat the eggs with the milk.
2- Bread the Pork Chops:
- Dip each pork chop in the flour mixture, then into the egg mixture, and back into the flour mixture, ensuring they are well coated.
3- Fry the Pork Chops:
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.
- Once the oil is hot, add the pork chops, cooking them in batches if necessary to avoid overcrowding.
- Fry each pork chop for about 4-5 minutes per side, or until golden brown and cooked through.
- Remove and drain on paper towels.
4- Make the Onion Gravy:
- Remove excess oil from the skillet, leaving about 2 tablespoons.
- Add the sliced onions and cook over medium heat, stirring occasionally, until they are soft and starting to brown, about 10 minutes.
5- Make the Roux:
- Sprinkle the flour over the onions and stir to coat.
- Cook for another 2 minutes to remove the raw flour taste.
6- Add Liquid:
- Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Bring to a simmer and cook until thickened, about 5 minutes.
